Roasted fresh river fish on cast iron pan

Minnows are small freshwater or saltwater fish that are often used as bait. While it is possible to find larger minnows, the most common way to cook and eat minnow is to deep-fry the smaller ones in bulk and eat them whole. You don't have to gut or debone them because of their size (think anchovies). And by using a simple deep-frying method, you can cook the minnows and have them ready to eat in no time.

Fill a large skillet with about an inch of cooking oil. You can use any type of oil that you'd like, including vegetable oil, olive oil or peanut oil.

Place the skillet on the stove and turn the heat to medium-high. While it heats up, mix one part flour with one part cornmeal in a bowl. Make sure there is enough to coat all the minnows that you wish to cook.

Dredge the minnows in the mixture and drop them into the hot oil. Cook them until the coating is fried to a golden brown.

Remove the fried minnows from the skillet with a slotted metal spoon and lay them on a plate that is lined with paper towels. After they drain, sprinkle them with salt and pepper to taste.
