Fish is an excellent source of protein, not to mention that it is rich in omega-3 fatty acids. There are several ways to prepare fish, including pan frying, grilling and baking. If all you own is a convection oven, though, you need to know how to use it correctly to cook your fish. Otherwise, the fish will turn out dry and tasteless.
In a large bowl combine pepper, dill weed and mayonnaise. Squeeze lemon wedges over the bowl, being careful to remove any seeds that fall out.
Mix the ingredients together. Coat each fillet with this mixture and set it in a baking dish.
Add a pinch of salt to the tops of the fillets.

Serve with rice and a vegetable.

If your fillets are on the thin side, you will need to reduce your cooking time by five minutes.
