Watermelon is the fruit of summer; it’s sweet, refreshing, and pairs perfectly with fresh mint and feta cheese. This salad is a great side dish for any protein (especially our Baked BBQ Baby Back Ribs!), and the perfect beach n’ go snack all summer long. Here’s how you make it:

1/4 cup red wine vinegar
1/2 cup extra virgin olive oil
2 tbsp fresh chopped mint
1 sweet onion, sliced into rings
1 lb watermelon, cut & diced
4 oz crumbled feta cheese
S + P

1. Combine red wine vinegar, olive oil, chopped mint, S + P in a bowl
2. Combine onion, watermelon and feta, then pour dressing over
