Vegan food blogger, Silvia Nagy-Ryan, is showing us how to make a unique and delicious vegan pasta dish. This is chock-full of healthy fats and amino acids from the avocado; a super satisfying dish easy to make during the week!

– 8 oz spaghetti
– 2 very ripe avocados
– 2 cloves of garlic, finely minced
– 2 tbsp extra virgin olive oil
– 1 tbsp lemon juice
– Cayenne pepper

1. Cook spaghetti according to the package
2. In a bowl, mash avocados, garlic, EVOO, lemon juice, a pinch of cayenne pepper, sea salt & freshly cracked black pepper
3. Mix together until smooth & creamy
4. Plate & top with avocado sauce
