Pasta alla Carbonara is one of our favorite signature Italian dishes. In lieu of red sauce, it's made with delicious bacon, egg, parmigiano cheese and freshly cracked black pepper. It's a great dish to make whether you're looking for a quick weeknight dinner or an impressive date night entrée. We teamed up with our Italian friend, Tommaso Sacco, to show you how it's made:
- 1 package of spaghetti - 5-7 slices of pancetta (or bacon), finely sliced - 4 eggs - 4 tbsp fresh grated parmigiano (+ more for garnish) - 4 tbsp fresh grated pecorino - Olive oil
1. Prepare spaghetti (or linguini) according to package 2. In a bowl, combine: eggs, parmigiano, pecorino, S + P 3. Whisk together 4. Heat 2-3 tbsp olive oil on high heat, once hot, add the pancetta & cook until golden (3-4 mins) 5. When pasta is done, strain and add to pancetta 6. Add pasta to the egg mixture (stirring quickly so that the egg doesn't cook!) 7. Top with parmigiano & fresh cracked black pepper
