Love the smell of warm muffins on a chilly morning but hesitate in baking because of all the hassle? Look no further than this simple no-mixer blueberry muffin recipe. No electric mixer required, just two bowls and a muffin tin! Now you can have your muffin, & eat it too. ?

*Yields 6-8 muffins*

1 3/4 cup flour
1/2 tsp salt
3 tsp baking powder
1/4 cup butter + 1 tbsp
1/2 cup sugar + 2 tbsp
1 egg
1 tsp vanilla extract
1 cup milk
Zest of 1 lemon + 2 tbsp lemon juice
1 cup blueberries


  1. Combine flour, salt & baking soda together in a bowl then stir
  2. Create a well in the center of the mixture
  3. In another bowl, cream the butter & sugar together
  4. Beat in the egg until smooth, then mix in the vanilla extract, milk, and lemon zest
  5. Pour wet mixture into the well, stir – just enough to moisten (don’t over stir)!
  6. Dust 1 cup of blueberries with flour, then fold berries into the batter
  7. Grease pan with butter & insert batter with an ice cream scoop
  8. Top with cinnamon & sugar
  9. Bake for 15 mins at 400
  10. While baking, warm together lemon juice, 2 tbsp sugar, 1 tbsp butter until everything is melted (medium-low heat)
  11. Brush muffins with lemon glaze & bake for another 5 mins
