Greek Salad with Poached Salmon

Looking for an easy, fresh & healthy salad? Look no further, introducing our take on the classic Greek Salad - top with our poached salmon and you've got yourself a meal.


  • Raw salmon
  • ½ cucumber, seeded + chopped
  • ¾ cup cherry tomatoes, halved
  • 1/3 cup red onion, chopped
  • ¼ cup olives, sliced
  • 1/3 cup feta cheese, crumbled, to taste
  • Pinch of dried oregano
  • Olive oil
  • Lemon juice
  • S +P

Poached Salmon:

  1. Fill a medium sauté pan with 2 inches of water
  2. Bring to a boil
  3. Add thinly sliced lemons
  4. Rinse raw salmon, pay dry
  5. Cover with salt and pepper
  6. Add salmon to water, bring to a simmer
  7. Poach for 10 minutes (until opaque throughout)

For Salad:

  1. Combine cucumber, cherry tomatoes, red onion, olives, feta and oregano
  2. Drizzle olive oil and lemon juice, add salt and pepper
  3. Optional, serve with poached salmon (or any other protein)
