This recipe is about to blow your mind: just 5 ingredients and 45 minutes gives you the ultimate snack- or side-dish worthy batch of smashed potatoes. They're seasoned perfectly, crispy and really addicting. (Seriously - when we whipped these up in the LEAF test kitchen they were gone in seconds.)
Here's how you make them:
Ingredients:
- 1 lb creamer potatoes
- Olive oil
- Parsley
- S + P
Instructions:
- Fill pot with salt water (enough for potatoes to be covered), and add potatoes
- Bring to a boil and simmer until fork-tender (about 20 minutes)
- Drain and let potatoes cool
- Arrange on a baking sheet, then smash each potato with the back of a measuring cup (be careful not to smash too hard)
- Drizzle with olive oil, salt and pepper
- Roast potatoes for 25-30 minutes (until crispy and golden) at 450 F
- Turn potatoes halfway through
- Sprinkle with chopped parsley
