Our first video with Lee is this drool-worthy chunky monkey banana toast. Caramelized bananas coupled with coconut flakes and our favorite creamy PB–it can double as a dessert with zero questions asked. Plus, you’re getting a great source of fiber, potassium, healthy fats and even some protein! Here’s how it’s done:
Gluten free bread
- Cut the bananas lengthwise, lay flat on a baking sheet and coat with coconut oil and maple syrup.
- Broil at 425 for 15-20 minutes, keep checking to make sure they don’t burn!
- Toast your bread, spread peanut butter, add your banana then sprinkle coconut flakes and drizzle more maple syrup.
