We teamed up with none other than the Insta-Superfood-Artist, Lee from America, to create amazing breakfast recipes that are easy and healthy with rich flavor profiles. These dishes are just as delicious as they are Instagram-worthy. Seriously, take a look!

Our first video with Lee is this drool-worthy chunky monkey banana toast. Caramelized bananas coupled with coconut flakes and our favorite creamy PB–it can double as a dessert with zero questions asked. Plus, you’re getting a great source of fiber, potassium, healthy fats and even some protein! Here’s how it’s done:

Ingredients:
Gluten free bread
2 bananas
Peanut butter
Maple Syrup
Coconut Oil
Coconut flakes

Instructions:

  1. Cut the bananas lengthwise, lay flat on a baking sheet and coat with coconut oil and maple syrup.
  2. Broil at 425 for 15-20 minutes, keep checking to make sure they don’t burn!
  3. Toast your bread, spread peanut butter, add your banana then sprinkle coconut flakes and drizzle more maple syrup.
  4. VOILA!
