Cacio e Pepe

Valleybrink Road shows us how to make the classic Cacio e Pepe, which literally translates to cheese & pepper. It's a traditional Roman dish that's satisfying and light - an ultimate crowd-pleaser.


  • 1 lb spaghetti
  • Olive oil 
  • Pecorino Romano cheese 
  • Freshly ground black pepper


  1. Boil water and salt generously 
  2. Add spaghetti and stir - cooking according to package (we like it al dente!) 
  3. Drizzle olive oil on the bottom of each bowl 
  4. Scoop pasta directly from pasta water into serving bowls 
  5. Spoon 1 tbsp pasta water over each bowl 
  6. Generously grate good pecorino romano and black pepper 
  7.  Mix, repeat cheese & pepper 
  8. ENJOY!
