Avocado baked eggs are trending in Pinterest land, for good reason… You’re getting the best of both worlds. Healthy fats, protein and carbs = the best post-workout breakfast. We love a good avocado toast and scrambled eggs, but putting these ingredients together in this easy bake is simple and packed with nutrition. Here’s how it’s done:

1 avocado, halved
2 eggs
Diced tomato
1/2 clove of garlic, minced
Red pepper flakes
Coarse salt

1. Halve 1 avocado & place upright in ovensafe bowl
2. Add 1 egg to each half
3. Top with diced tomato, minced garlic, red pepper flakes & coarse salt
4. Bake at 425 for 20 mins (less if you want the yolks more runny)
