Most people don't realize that a cake mix can be used for many things besides a cake. One great use for a cake mix is to make cookies. A golden butter cake mix can make delicious snickerdoodle-like cookies in a flash. You only need a few ingredients and a bit of time to create homemade cookies that will be a hit in your household. This recipe will make approximately three dozen cookies.

Preheat oven to 375 degrees F. Grease one or two cookie sheets.

Combine the sugar and cinnamon in a small bowl.

Mix the cake mix, eggs and oil in large bowl, stirring the mixture until it is well-blended.

Shape the dough into 1-inch balls.

Roll each dough ball in the cinnamon-sugar mixture.

Place the balls 2 inches apart on cookie sheets. Flatten the balls with the bottom of a glass.

Bake the dough at 375 degree F for eight to nine minutes or until the cookies are golden brown.

Cool the cookies for one minute on the cookie sheets. Then remove the cookies to cooling rack to cool completely.

Tip

This recipe will work with any yellow or golden cake mix. Solid shortening is best for greasing pans, but oil or butter may be used. A teaspoon of almond flavoring is delicious in these cookies.

Warning

Remove the pans from the oven promptly. Your cookies will burn easily. Allow the cookies to set until they are cool to keep them from crumbling in your hand.
