This recipe for banana pancakes is not only relatively quick and tasty, but makes for a healthy breakfast treat as well. Use up those browning bananas–throw them into your pancakes, not the trashcan. This recipe is sure to be a crowd and kid pleaser. Preparation and cooking time is 15 minutes. Makes 8 to 10 4-inch pancakes.
Things You'll Need
Mix together flour, sugar, baking powder and salt in large mixing bowl. Make a well in the center.
Beat egg, oil and milk together in second mixing bowl.
Pour egg mixture into center of dry mixture and stir. (Batter should not be lumpy.)
Mash bananas and add them to the batter.
Grease griddle or skillet and warm over medium heat.
Pour 1/4 cup batter onto griddle and cook for about 2 minutes on each side, or until pancakes are golden brown.
Transfer pancakes to plate and serve.
Substitute 2 egg whites for 1 egg.
For added variety, try adding 1/4 cup nuts or 1/2 cup shredded coconut to the original recipe.
Serve with butter, syrup or even peanut butter.
