Nearly everyone loves ice cream, but we tend to stick to the same boring flavors. If you love the flavor and texture of cinnamon, you'll love cinnamon ice cream, which tastes somewhat like a cinnamon sugar cookie. Unless its Christmas time, you are not likely to find cinnamon ice cream in the stores. This is an easy fix, as you can bring home that boring plain vanilla ice cream and mix in your own cinnamon to your taste.
In a small bowl, combine the cinnamon and the vanilla extract until it makes a paste.
Place the ice cream in a large freezer-safe bowl. If the ice cream is hard, Leave the ice cream at room temperature for 10 or 15 minutes to soften up a bit for easier mixing.
Add the cinnamon and vanilla paste to the ice cream, mixing until well combined. Taste the ice cream. Feel free to add more cinnamon for a stronger flavor.
Place the ice cream in the freezer covered with plastic wrap to allow it to firm up before serving or eating.
For a more robust cinnamon flavor, use freshly grated cinnamon sticks instead of the ground bottled cinnamon.
