5 Vegan Recipes To Add To Your October Cooking List

It may seem like going vegan, or at least focusing on eating more of a plant based diet, is easier in the summer because of the constant availability of fresh fruit and veggies. On the contrary, there are plenty of fall inspired dishes, too — even a little pumpkin recipe (or two), because it's ~super~ high in Vitamin A. Here are five of the most mouthwatering vegan recipes that make us think of nothing but crunchy leaves and apple orchards.

Sweet Potato Cauliflower Curry

When it comes to plant based, we had to tap the Minimalist Baker. Dana, the cook and brains behind all of the vegan recipes, is a complete genius. This dish is filled with veggies, but what makes us think fall are the colors. The red of the curry, orange of the sweet potato and the roasted golden color of the cauliflower — it just looks like a fall maple tree on a plate. Not to mention, who doesn't love a good curry?

Pumpkin Pie Cups

You usually can't mess around with the classic pumpkin pie, but we think Natalie from Feasting on Fruit nailed her vegan version. The secret? We think it's the dates she used to sweeten it, and the fact that you can't even tell! The little cups still have that perfect orange from the pumpkin puree and the grain-free crust is only three ingredients! That's it! Almond flour, maple syrup and water. Sounds like magic to us.

Cilantro and Sweet Corn Soup

Soup in general is just a given for fall. Towards the end of summer the cravings kick in and you know all you need is a warm bowl, or something creamy, and an oversized sweater. In this case, it's cilantro and sweet corn soup. It's really the best of both worlds — that delicious, fresh-picked summer corn all wrapped up in a healthy plant based soup.

Healthy Oatmeal Chocolate Chip Cookies

There's something about oatmeal that just screams cooler temperatures and the start to the holiday season. And when it's in a cookie, that's even better. Once again from the Minimalist Baker, these cookies are gooey and loaded with chocolate. Yes! You can still have chocolate while eating vegan — it does come from a plant after all.

Pumpkin Pasta

A good creamy pasta sauce is one of the hardest things to come by when you're going vegan. Well this is not only creamy, but hello, it's pumpkin! Who said we had to save all the pumpkin-y goodness for the sweets? One the secrets here is finding a good plant based butter. In this case it's Earth Balance, which you can find at most grocery stores. That's the trick to eating this way, always keeping your eyes and ears open for the next best grocery store find!
