There are so many different ways to make muffins — from homemade goodness to store bought simplicity. Stores sell muffin mixes that only ask you to add water and oil — so easy! You don't, however, need to purchase these store mixes if you have a box of pancake mix on hand. The pancake mix is an excellent base to begin creating your own muffin mix (who knew?!). These muffins are great for breakfast, a snack or as a dessert, just follow these easy steps to turn your pancake mix into deliciously tasty muffins!

Crack your eggs in to a bowl and make sure you remove any shells. It is best to do this first, otherwise you will have trouble seeing the shells among the other ingredients.

Add your milk, sugar and vegetable oil to the bowl. Stir to combine all of these ingredients.

Add the pancake mix and stir to combine. The mix will be a little thick, but it will be moist. Try to make sure that you don't have too many lumps — some are okay, but it is no fun to bite in to a muffin and get a patch of dry pancake mix.

Place muffin cups in your muffin pans. If you don't have any, you can always grease the muffin pans so the muffins come out without sticking to the pan.

Fill each of the muffin cups up 1/4 of the way.

Spoon half a teaspoon of the apple preserves in the muffin cups for an extra delicious addition to the plain pancake mix.

Add another layer of muffin mix to the muffin cups so that the cups are now half full.

Spoon another half of a teaspoon of apple preserves on each muffin. Then finish the muffins off with a final layer of muffin mix. This should bring your muffin cups to 3/4 of the way full. The muffins will rise in the oven so you don't need to fill them all of the way.

Set the muffins in the oven at a temperature of 425 degrees for 15 minutes. Muffins should be slightly golden brown on the top.

Allow the muffins to cool off before consuming them.

Tip

Sprinkle cinnamon on the top of the muffins just before baking for added flavor.

Warning

Use a pot holder to remove the muffin pans. They will be very hot and you could easily burn yourself.
