Modeled after the dessert they were named for, pineapple upside-down cake drinks look just as good as they taste. A clever combination of cake-flavored vodka and pineapple juice results in a fruity and brilliantly yellow drink. Adding a splash of grenadine lends a pop of contrasting color as it settles on the bottom, creating a lovely red hue that mimics the appearance of the baked dessert.
- 1 1/2 ounces cake-flavored vodka
- 3 1/2 ounces pineapple juice
- Splash of grenadine
- Maraschino cherry, for garnish
Combine ice, vodka and pineapple juice in a cocktail shaker and shake for 20 to 30 seconds, until well chilled.
Strain into a cocktail glass.
Add a splash of grenadine and drop a single maraschino cherry into the glass to consume when the drink is finished.
If you don’t have grenadine on hand, you can replace it with a variety of juices or syrups, since its addition is cosmetic and won’t effect the resulting flavor. Substitute the grenadine with pomegranate juice, pomegranate molasses, maraschino syrup or liqueur, raspberry syrup or even creme de cassis.
If cake-flavored vodka is difficult to locate, you can replace it with whipped cream-flavored vodka or vanilla vodka. You can even substitute with plain vodka; just add a splash of vanilla extract for sweetness.
