Chia seed powder is a powerful source of vitamins, minerals and nutrients. The most nutritious chia seed powder is made by sprouting the seeds until the tiny leaves from the sprouts begin to open and spread. The entire chia seedling is then dried and chopped finely to form a shelf-stable powder. Sprinkle the chia powder into smoothies and sauces to increase protein and fiber while firming up the liquid's consistency. Chia powder can also be used to fortify a salad, yogurt or bowl of oatmeal.
Spread the sprouted chia seeds evenly over half of a kitchen towel, and fold the other half over them to cover.
Store the drying sprouts in a room that stays 70 degrees or warmer for two to three days or until they have completely dried out.
Dump all the dried sprouts into a food processor, and secure the lid firmly.
Pulse the food processor until it chops the dried chia seedlings into a fine powder resembling buckwheat flour.
Pour the powder through a fine mesh sieve and into a clean glass or plastic jar.
