Complete muffin mixes are sold in grocery stores. You can make the muffin mixes as is, or add ingredients of your own to jazz the muffins up a bit. For example, a can of corn can be added to a corn muffin mix to give the muffins an authentic corn flavor. The bits of corn also add texture for individuals who want a little crunch when they bite in to the muffins.
Pour 8 to 8 1/2 oz. of your favorite corn muffin mix and 8 1/2 oz. of canned corn in to a large bowl. You can use sweet corn, or cream-style corn.
Add 1 egg, 1/8 cup of vegetable oil, 3 oz. of shredded cheddar cheese, 3 oz. of sour cream, and 1 tsp. of chopped chives to the muffin mix. Stir until all of the ingredients are combined.
Preheat the oven to 375 degrees F.
Place muffin cups in your muffin pan while the oven is heating up. Pour the muffin mix in the muffin cups. You want each cup to be 2/3 full. The muffins will rise when baking.
Set the muffins in the oven, and bake for a total of 15 to 18 minutes. The muffins are done when they begin to look golden brown. This recipe will make between 12 and 15 muffins.
Tip
Chopped bacon, or bacon bits can also be added to the muffin mix before baking.
Warning
Use an oven mitt to remove the muffin pan from the oven. You don't want to get burned.
