Wholesome Chocolate Chip Banana Bread

This chocolate chip banana bread was a ~huge~ hit in our test kitchen. Made with health-minded ingredients like spelt flour and coconut sugar, it's low on the calorie and glycemic scale, but just as good as you remember. Not to mention, you can mix the whole thing in one bowl. It's still a moist masterpiece at the end!

Here's how it's done...

Ingredients:

  • 3 medium ripe bananas
  • 1 1/4 cup spelt flour
  • 3/4 cup almond milk
  • 1 egg
  • 1 1/4 cup flaxseed meal
  • 1 1/4 cup gluten free oats
  • 1/4 cup coconut sugar
  • 3 1/2 tsp baking powder
  • 1/4 cup brown sugar
  • 3 tbsp grape-seed oil
  • 1/2 tsp ground cinnamon
  • 3/4 tsp sea salt
  • 1/2 tsp vanilla extract
  • 3 tbsp maple syrup
  • 1/3 cup dark chocolate chips

Instructions:

  1. In a large bowl, mash your bananas
  2. Add in the rest of the ingredients and mix
  3. Pour mix into a single bread pan, sprayed with cooking oil
  4. Bake for 50 minutes at 350 degrees
