Packaged baking mixes, sometimes referred to as pancake mix, provide all the dry ingredients necessary to prepare pancakes, waffles or biscuits. These mixes remain a staple in many home pantries. Though you may reach for the mixes most often when it’s breakfast time, you can create nutritious lunch and dinner entrees with the baking mixes as well. Various companies produce pancake and baking mixes, including Bisquick, Pioneer Brand, Jiffy and Hodgson Mill. For customers with dietary concerns, some of the companies also offer gluten-free, whole-wheat or heart-healthy versions.
Hearty Chicken Pot Pie
Assemble your ingredients, including margarine or nonstick cooking spray, a 16-oz. package of mixed vegetables (thawed), 1 cup cooked and cut-up chicken, a 10.75-oz. can cream of chicken soup, 1 cup baking mix, ½ cup milk and 1 egg. Gather your tools, including a 2-quart oven-safe casserole dish, large spoon, medium bowl, small bowl and a fork. Heat your oven to 400 degrees Fahrenheit. Grease the dish.
To make the filling, mix the vegetables, chicken and soup in the medium bowl using the spoon. Pour the mixture into the casserole dish. To make the topping, add the milk, baking mix and egg to the small bowl. Mix with the fork. Pour the topping mixture evenly over the filling ingredients in the casserole dish. Bake the pot pie in the oven for about 30 minutes or until the topping is golden brown.
Chipotle Bean Burrito Cheese Tarts
Gather your ingredients, including butter or nonstick cooking spray, 1 ¼ cups baking mix, 1 ½ cups sour cream, ½ cup melted butter, 2 cups Cheddar cheese, 1 package taco seasoning mix, ½ cup flour plus ¼ cup for kneading, 1 cup refried beans, 2 chopped chipotle peppers, 4 tbsps. chopped cilantro, 1 tsp. lime juice, 2 cups lettuce, 1 cup chopped tomatoes and ½ cup salsa. Assemble your supplies, including a 12-count muffin tin, two small bowls, two spoons, a spatula, plastic wrap, a rolling pin and a cookie or biscuit cutter. Preheat the oven to 375 degrees Fahrenheit.
Spray the muffin tin with cooking spray. Using a spoon, stir the baking mix, ½ cup sour cream, melted butter, ½ cup cheese and 1 tbsp. taco seasoning in a small bowl. Cover your hands with flour. Move the dough onto a floured surface. Knead the dough four or five times. Pat the dough down. Dust flour on top. Place plastic wrap on top of the dough. Using the rolling pin, roll the dough to about ¼-inch thick. Use the biscuit cutter to cut 4-inch rounds out of the dough. Place each round in its own muffin cup in the tin. Push your fingers in the center of the dough to ensure the dough clings to the bottom and the sides, leaving an indent or tart shape for the filling.
In a small bowl, blend the refried beans, 1 chopped pepper, 2 tbsps. cilantro and 1 tbsp. taco seasoning. Evenly distribute the filling into the tarts. Sprinkle the remaining cheese on the tarts. Bake for about 15 minutes. Turn the tin once after about 7 minutes to ensure even baking. Mix the remaining sour cream with the remaining taco seasoning, peppers, cilantro and lime juice. Use the mixture as a condiment. Serve with the shredded lettuce, chopped tomatoes and salsa.
Assemble your ingredients, including 1 lb. ground turkey, 1 medium chopped onion, ½ cup skim milk, 2 large eggs, ¾ cup baking mix, 2 sliced tomatoes, 1 cup shredded cheese, ¼ tsp. salt and ¼ tsp. pepper. Gather your supplies, including a frying pan, a 10-inch pie plate, a mixing bowl and a spoon. Preheat the oven to 400 degrees Fahrenheit.
Place ground turkey in the heated frying pan. Break the turkey into small pieces. Add the onion to the pan. Brown the turkey and onions on medium heat for about five minutes. Drain if necessary. Scrape the mixture into the pie plate. Mix in salt and pepper. In a mixing bowl, blend the milk, eggs and baking mix. Pour the mixture over the filling. Bake for about 25 minutes. Remove from the oven. Arrange sliced tomatoes and cheese on top. Return the pie to the oven and bake about 5 to 8 minutes more until cheese is melted.
Chicken Casserole with Broccoli
Gather your ingredients, including 1 cup baking mix, 1 ½ cups cooked, chopped chicken, a 10-oz. package frozen chopped broccoli (rinsed and drained), 1 ½ cups shredded cheddar cheese, 1 cup milk, 3 eggs, ¼ tsp. seasoning salt and ¼ tsp. pepper. Assemble your supplies, including cooking spray, a 2-quart casserole dish, a mixing bowl, a spoon and a knife. Preheat the oven to 400 degrees Fahrenheit.
Arrange chicken, broccoli and cheese in the dish. Place baking mix, milk, eggs, salt and pepper in the mixing bowl. Stir with the spoon. Pour mixture over chicken, broccoli and cheese. Place the dish into the oven and bake for about 35 to 40 minutes. To check whether the casserole is done, insert a knife in the center. If it comes out clean, you can remove the casserole from the oven to cool before serving.
