Packaged baking mixes, sometimes referred to as pancake mix, provide all the dry ingredients necessary to prepare pancakes, waffles or biscuits. These mixes remain a staple in many home pantries. Though you may reach for the mixes most often when it's breakfast time, you can create nutritious lunch and dinner entrees with the baking mixes as well. Various companies produce pancake and baking mixes, including Bisquick, Pioneer Brand, Jiffy and Hodgson Mill. For customers with dietary concerns, some of the companies also offer gluten-free, whole-wheat or heart-healthy versions.
