Delight, much like baked goods, falls flat when you bite into an underdone muffin. Not only is the eater's enjoyment ruined, but the taste, texture and look of your carefully prepared muffin is destroyed when you pull those little cakes from the oven too early. Properly baked goods will leave both you and your guests satisfied.

Follow the directions of your recipe. Set a timer for 3 to 5 minutes shorter than the time indicated in the recipe.

Open the oven when the timer rings. Pull out the muffin pan only far enough to reach a muffin with a pair of potholders. Do not expose the whole pan to the open air. This will cause the undone batter to fall flat.

Insert a toothpick in the center of the muffin. The toothpick should come out clean with only a couple of crumbs clinging to the sides. If the toothpick has batter sticking to it, the muffins are not done.

Return muffins to the oven and allow to cook for a couple more minutes. Repeat the test, checking on a different muffin to ensure they are properly baked.
