A cocoa nib is a piece of cocoa bean that is no longer in the hull. Prepared cocoa nibs are dry roasted to bring out the aroma and flavor. You can purchase cocoa nibs, or roast your own in the oven. Roasting a cocoa nib yourself ensures you have the freshest nibs possible for use in your recipes. You can also eat roasted cocoa nibs as they are, without adding them to any other food products.
Spread the cocoa nibs in a single layer on a cookie baking sheet. Do not use any non-stick spray. Preheat the oven to 150 F.
Put the cookie sheet into the oven on the middle shelf once the oven has heated. Move slowly so the nibs do not roll, or they may not bake evenly.
Roast the nibs at 150 F for five minutes. Lower the temperature to 120 F and cook the nibs for a further ten minutes. Remove the nibs from the oven and let them cool completely.
