Beets are low in calories and loaded with nutrients, making them the perfect side dish for any dinner. This nutritious side dish can be prepared in minutes. Additionally, beet greens can be used in a salad or sauteed for another delicious side dish.
Things You'll Need
Cut off the beet stalk and tip. Use a vegetable peeler to remove the skin. Rinse the peeled beets in water.
Cut the beets in half and then in half again so that they are quartered. Place the beet quarters in the glass baking dish. Add about 1 inch of water to the dish.
Cover the dish with plastic wrap. Microwave on high four minutes. Let the beets rest, covered, for four minutes. Turn the beets, replace the plastic wrap and microwave an additional four minutes. The beets are ready when a knife can be inserted easily.
Slice the beets into bite-size pieces while they are still in the dish. Drizzle with olive oil and salt to taste.
Beets can be served warm or cooled and added to salads.
