Spumoni, a traditional Italian ice-cream dessert, is made of two or three layers of different flavors of ice cream. The ice creams is layered in a mold with whipped cream. The dessert is removed from the mold, sliced and served. There are many variations on spumoni recipes, including making the ice cream from scratch. But there's nothing wrong with taking the simple route and using store-bought ice cream.
Line the mold with foil and freeze well. The foil will help you unmold the dish later.
Chill the large bowl well in the freezer. Remove from freezer and put in the pistachio ice cream. Beat it with the wooden spoon until it is smooth but not melted. The consistency should be like mashed potatoes.
Spread the ice cream inside the mold in a layer about two inches thick. Cover the bottom and sides of the mold. Put the mold back in the freezer and leave it until the ice cream has refrozen.
Wash the bowl and chill it again. Soften the strawberry ice cream with the wooden spoon and spread it in a layer over the pistachio ice cream. Refreeze until firm again.
Whip the heavy cream until stiff peaks form. Slowly add the powdered sugar until it is thoroughly combined. Fold in the chopped cherries and pecans. Use the whipped cream to fill the rest of the mold. Refreeze until firm.
Rechill the bowl and soften the chocolate ice cream with the spoon. Spread it evenly over the top of the entire mold and refreeze.
Put the mold in a bowl of very warm water for a few seconds to loosen the ice cream. Be careful not to get any water on the ice cream inside. Place a serving plate upside down on the top of the mold, then turn the whole thing over to unmold the ice cream onto the serving plate. Take off the foil and it is ready to serve.
Use a silicon or plastic spatula dipped in hot water to smooth the surface of the ice cream before serving. Also, garnish the top with whole maraschino cherries.
Traditionally, spumoni is served in slices.
You can also make the ice creams from scratch if you have an ice cream maker.
You can use different flavors of ice cream. Add a dash of rum or other flavoring to the whipped cream for added interest.
