Daiquiris may be the quintessential tropical cocktail. The basic daiquiri formula combines rum, fruit and sugar plus plenty of ice, which makes them perfect for hot summer nights. A virgin daiquiri, then, is basically a fruit slush or dairy-free smoothie. A well-made virgin peach daiquiris celebrates the peak of summer stone fruit season without the alcohol buzz to distract from the moment.

  • 2 cups peach nectar
  • 4 to 5 ripe peaches, peeled and sliced
  • Juice of 4 limes
  • 4 cups ice cubes
  • 4 peach slices or mint sprigs, for garnish

In a pinch, you can substitute two 15.5-ounce cans of peaches in juice or light syrup for the fresh peaches; you can also use frozen peach slices. You can also substitute 1/2 cup of limeade concentrate for the lime juice. For another variation, try substituting club soda or lemon-lime soda for the peach nectar; if you use club soda you may need to add simple syrup or powdered sugar to taste as well.

Place all the ingredients in a blender or drink mixer capable of crushing ice. Blend until well-mixed. Pour the drink into a hurricane, coupe or martini glass. Garnish with peach slices or mint sprigs.

Create variations by adding other fruits such as strawberry, pineapple or banana to the blend. Fresh fruit is best, though frozen and, in the case of pineapple, canned will also work. Or substitute orange juice for the peach nectar for an orange-peach virgin daiquiri.
