We all want healthy meals—and we usually want them fast, without a lot of fuss and preferably with limited dirty dishes. This might sound like a dream, but it’s actually doable (for the most part). For the recipes below, all you have to do is toss your ingredients into a crockpot, let them cook and you’re ready to go after just a few hours. Sounds great, right? Suddenly making dinner at home a few nights a week doesn’t sound so scary.

So this recipe isn’t quite a crockpot, but instead an Instant Pot. Instant Pots are the new hot kitchen utensil, so we wanted to include a recipe on this list. The buzz with Instant Pots is that they can cook things like beans and noodles that would normally take hours, in half the time. Of course I had to include a take on chicken enchiladas. After all, isn’t that the ultimate comfort food? Between the quinoa, beans, corn, salsa and seasonings you’re in for a nutrient-dense dish that’ll make you feel like you’re on a Mexican vaca and there’s absolutely nothing wrong with that. White beans have quickly become a staple in my diet (you can probably tell from this roundup that I’m a big bean fan) when I’m looking for non-meat protein.
