We all want healthy meals—and we usually want them fast, without a lot of fuss and preferably with limited dirty dishes. This might sound like a dream, but it’s actually doable (for the most part). The buzz with Instant Pots is that they can cook things like beans and noodles that would normally take hours, in half the time. Of course I had to include a take on chicken enchiladas. After all, isn’t that the ultimate comfort food?
