Carrot & Coconut Smoothie

This smoothie boosts the immune system and gives you a burst of energy for the day ahead. The ginger gives it a nice kick with a smooth finish from the blended coconut meat and sweet carrot. Here's how it's done:

Ingredients:

  • 1 carrot, peeled & chopped
  • 1/2" ginger, peeled & chopped
  • 3/4 cup coconut meat
  • Raw honey, to taste
  • 1 cup coconut milk (more to thin)
