Ingredients:
– Arugula
– 2 tbsp roma tomatoes
– Olive oil
– Garlic salt
– 2 eggs
– Shredded mozzarella
– Grated parmesan cheese
– Pinch of shredded mozzarella
– Top with grated parmesan

1. In a small bowl, combine arugula, tomatoes, olive oil, garlic salt
2. Preheat oven to 400 and butter 2 ramekins
3. Add a large spoonful of the salad mixture, one egg, pinch of mozzarella & top with parmesan, S + P
4. Bake for 8-10 mins
