Arugula Baked Eggs

This is a super quick and healthy dish that's great for breakfast or lunch. Enjoy! (This makes 2 servings.)

Ingredients:

  • Arugula - 2 tbsp roma tomatoes - Olive oil - Garlic salt - 2 eggs - Shredded mozzarella - Grated parmesan cheese - Pinch of shredded mozzarella - Top with grated parmesan 1. In a small bowl, combine arugula, tomatoes, olive oil, garlic salt 2. Preheat oven to 400 and butter 2 ramekins 3. Add a large spoonful of the salad mixture, one egg, pinch of mozzarella & top with parmesan, S + P 4. Bake for 8-10 mins
