Frozen bananas can be made into a whipped dessert that will fool even the pickiest eater into thinking it’s naughty. To make four servings, place four peeled frozen bananas in a blender and pulse until pureed. Transfer to serving bowls and add nuts or chocolate chips if desired.
Peanut-Butter Banana Coins
These treats are bite-sized finger food, making them a delectable dessert option for a summer party. You will need 5 peeled bananas sliced into coins, 1/2 cup smooth peanut butter, 1/2 cup roasted peanuts and a package of semi-sweet baking chocolate. Freeze the banana coins until totally hard (about 2 hours), then spread a layer of peanut butter on each coin. Return to the refrigerator for 30 minutes. Heat the chocolate in a microwave-safe bowl until melted, stirring every 15 seconds. Dip each banana coin in the chocolate and transfer to a wax paper-lined baking sheet. Sprinkle peanuts on each coin and freeze for another hour. Serve immediately.
Chocolate-Dipped Banana Pops
Making bananas into frozen pops is a delicious way to put a healthy spin on a classic cool-down summer treat. For this fun recipe, you will need waxed paper, 8 peeled bananas, 8 Popsicle sticks, a 32-oz. bag of semi-sweet chocolate chips, 4 tablespoons unsalted butter or margarine and chopped walnuts. Line a baking sheet pan with waxed paper. Cut an inch off the end of each banana and insert a Popsicle stick. Place the bananas on the sheet pan and freeze for an hour. While the bananas freeze, melt the chocolate in a microwave-safe bowl for 1 minute, stirring every 15 seconds to prevent scalding. Dip the frozen bananas in the melted chocolate to coat completely, then roll them in walnuts. Return to the freezer for 1 hour, then serve immediately.
Banana Cream Dessert
When you’re craving something creamy, reach for a light but luxurious frozen banana treat. Mash together three peeled frozen bananas, 3 tbsp. brown sugar and 1 tbsp. lemon juice in a bowl. Beat 1/2 cup evaporated milk with a hand mixer until fluffy, then stir in the banana mixture. Cover and freeze for 2 hours. Stir and serve.
