There is no need to go to your local grocery store to purchase commercially produced vegetable juice. Health-conscious individuals and vegetarians often juice fresh vegetables at home to obtain the full nutrient value of the vegetables in a flavorful, drinkable form. There are several delicious combinations of vegetables you can juice with your electric juicer.

Gazpacho Cocktail

This combination of vegetables is reminiscent of the famous, Spanish cold vegetable soup — gazpacho. Gazpacho is an uncooked soup that traditionally contains tomatoes, stale bread, cucumber, bell pepper, garlic, olive oil, wine vinegar and salt. You will only need the tomatoes, garlic, cucumber and bell pepper. You must peel the garlic and seed the bell peppers before juicing them, but the tomatoes do not have to be peeled.

Green Giant Blend

You can blend your favorite combination of green vegetables to make a powerful, deep-green, juice blend. Spinach, parsley, celery, cucumbers, wheat grass, lettuce, mint, alfalfa, arugula, various fresh herbs, various greens and aloe vera are all viable options for a green juice blend. Also, spirulina powder, which is a green dietary supplement made from cyanobacteria, is often added to green juice blends.

Carrot-Ginger Blend

Carrots and ginger are a perfect combination for juicing. The mild, slightly sweet flavor of carrots matches well with the sharp, pungent essence of ginger. You do not need to peel carrots before juicing, but you may want to peel or cut away the parts of the ginger root that are tough and woody to avoid damaging the juicer. You can also add other vegetables to this blend, including jicama, celeriac and other root vegetables.

Borscht Drink

Borscht is another cold soup. It originated in Russia and its primary ingredient is beets. Beet juice is deep purple, flavorful and very healthy. You can cut up and juice several beets with cucumbers, rutabagas, turnips, radishes and whatever other vegetables you desire.

You can create an Asian-inspired juice blend using several Asian vegetables. Ginger, bamboo shoots, Chinese cabbage, bok choy, Chinese eggplant, bitter gourd melon, ginseng and kohlrabi are several wonderful selections for this juice blend. These vegetables are vitamin-enriched.
