If you’re looking for a snack that is rich in antioxidants, good for your heart and loaded with vitamins, pistachios are a wise choice. According to the U.S. Food and Drug Administration, evidence indicates that eating 1.5 ounces of pistachios (or most nuts) may reduce the risk of heart disease when eaten along with a healthy diet. While raw pistachios are certainly packed with flavor, roasting them enhances their natural flavors.
Things You'll Need
Preheat the oven to 250 degrees Fahrenheit.
Combine water and salt in a saucepan and bring to a boil.
Add pistachios and bring back to a boil, stirring until the water evaporates.
Distribute the pistachios in a single layer on a jelly roll pan.
Roast for 1 ½ to 2 hours, stirring every 30 minutes. Take care to not over roast the nuts.
