Wedding mints can be an extra treat at the guest tables, or they can add an extra touch to the wedding cake. A small batch of mints can be made from a little powdered sugar, cream cheese and mint flavoring. They can be frozen for weeks, or placed on layers of waxed paper and refrigerated.
Mix the softened cream cheese and 1 cup of powdered sugar.
Add the mint and a few drops of food coloring, then insert the rest of the powdered sugar.
Roll the mixture into balls small enough to fit on a teaspoon. Place the balls on waxed paper and let them set for 5 minutes.
Dip the balls in granulated sugar on the side that will go into the mold. Press the balls into the mold and let them dry for at least a week. Turn the mints over each day to help them dry.
