Tandoori masala powder is a mixture of spices commonly used in Indian, Afghan and Pakistani dishes. The spices can vary somewhat, but usually include garam masala, cumin, ginger, garlic and cayenne pepper, among others.
Things You'll Need
Lightly oil or spray a saute pan, just enough to avoid sticking, and warm the pan. Place the coriander and cumin in the pan and roll them around until roasted. They are ready when you can smell them.
Place the coriander and cumin in a spice grinder with the rest of the powdered ingredients and mix well.
Store in a glass jar and use as needed.
Try variations, including 1 1/2 teaspoons black pepper, 1 1/2 teaspoons cardamom, 1/4 teaspoon cloves and 1/4 teaspoon cinnamon.
The most challenging part of making a masala spice mixture is finding all of the powdered ingredients. You might have luck checking in local ethnic markets or purchasing online.
