Stuffed green peepers combine your meat, rice and vegetables all into one great dish. This perfect heart-warming meal for a cold night is even better because you can use a slow cooker to prepare it. While you’re at work, you can let the slow cooker do its thing, allowing you to be greeted by the aroma of this tantalizing dish when you get home and have dinner waiting for you.

Cut off the tops of the green peppers, and clean out the membranes and seeds, taking care to keep the peppers intact.
In a large pot, bring water to a rolling boil. Boil peppers for about 10 minutes. Add your pouches of rice at the same time. Remove peppers and rice from water. Set aside peppers. Open rice pouches, and place in a large bowl.
In a skillet, brown ground beef. Remove when brown, and drain grease. Add beef to bowl with rice.
Take 1/3 cup of the tomatoes and juice, and set aside. Add the rest of the can of tomatoes and juice to the rice and meat mixture. Stir in Italian spices and salt to give it more flavor.
Spoon the meat mixture into each pepper, filling the pepper to the top. Distribute the remaining diced tomatoes on top of each pepper.
Place remaining meat mixture on the bottom of your slow cooker. Add 1/3 cup of water. Place stuffed peppers on top of mixture. Try to use the mixture to hold the peppers up so they don’t touch the side of the slow cooker.
Cook on low for six to eight hours.
You can add Italian spices to mixture. You can also add salt to mixture or inside the peppers before you stuff them, depending on if you are on sodium restricted diet.
