Pour water into a pot and place the pot on the stovetop.
Turn the stove onto high heat and bring the water to a rolling boil.
Add the sugar to the boiling water.

Continue to cook and stir the mixture until all of the sugar has dissolved into the water and the mixture has a syrup-like consistency.
Remove the pot from the heat and allow the simple syrup to cool.
Transfer the simple syrup into a container and store the covered container in the refrigerator.

Water has reached a rolling boil when it doesn’t stop boiling when you stir the mixture.
When the sugar and water mixture drips off a spoon in a stream, it has the correct syrup consistency for simple syrup.
