Scampi is a variety of lobster, Nephrops norvegicus, that is found in the Mediterranean and the North Atlantic Ocean. About the size of an extra-large shrimp, it weighs about 1/2 lb. Over time, the word has also come to mean any of the larger varieties of shrimp. This buttery wine, garlic and lemon sauce is used in the preparation of lobster scampi and can be used to good effect with any seafood.

Melt the butter in a large skillet over medium heat. Peel and chop the garlic, slice the green onions and chop the parsley.
Cook the chopped garlic in the butter for about 2 minutes or until the garlic is softened, but not browned. Removed the pan from the burner; the residual heat will cook the rest of the ingredients.
Add the chopped green onions, white wine and lemon juice to the butter.
Add the chopped parsley to the sauce, and add salt and pepper to taste. Serve over shrimp, lobster or other seafood.
Scampi sauce works well over any seafood.
