Cannoli consists of a fried shell and a creamy filling. The Italian dessert recipe varies depending on personal tastes. Cannoli shells generally are filled with a ricotta cheese filling, but you can also fill the shells with chocolate, candied fruit or custard. Instead of purchasing the shells at the store, you can make your own at home with basic ingredients you have in your pantry.

Combine 3 cups all-purpose flour, 1 tbsp. granulated sugar and 1/4 tsp. cinnamon in a medium bowl.

Add 3/4 cup white wine. Blend the ingredients with a fork to form a ball of dough.

Knead the dough on a floured surface until it feels smooth and pliable.

Place the dough in a bowl, and cover it with plastic wrap. Refrigerate the dough for two hours.

Warm a skillet on the stove over high heat. Pour in 1 inch vegetable oil, and heat it until the oil reaches 325 degrees F.

Roll the dough out into a big circle on a floured surface to a thickness of 1/3 inch. The dough will be almost as thin as paper.

Cut five 8-inch circles from the dough with a pizza cutter. Wrap the circles around a cannoli form, and seal them shut with egg yolk.

Place the cannoli shells into the vegetable oil until they are golden brown. Only place two to three of them in the pan at a time to prevent overcrowding.

Remove the cannoli shells with tongs. Place them on paper towels to allow excess oil to drain off. Remove the shells from the forms before they cool, because the shells may stick to the metal.
