Oven roasted potatoes are a perfect savory compliment to any meal; especially roast chickens and roast beef. There is a fine art in creating the perfect roast potato, particularly if you like them crisp with a bit of flavor.
Things You'll Need
Preheat the oven to 375 degrees F.
Cut and peel as many potatoes as you want into quarters. Take a sealable plastic bag and pour 1/3 cup olive oil into it — maybe more if you are using a lot of potatoes. Add the salt, black pepper, rosemary and dry parsley to the olive oil. Put the potatoes into the bag. Close the bag then and shake it so that the oil and herbs cover all of the potatoes thoroughly.
Take the potatoes out of the bag and place them on a flat pan covered with aluminum foil. Roast for approximately 30 minutes and then open the oven and turn each potato over. Once all the potatoes have been turned, close the oven and let them roast for an additional 15 to 20 minutes or until they are as crispy and brown as you like. Once they are done, take them out of the oven and serve with your meal.
