Everyone loves these fluffy breakfast creations crowned with syrup, butter, berries, peanut butter or loads of other toppings, but pancakes with 7-Up are lesser known than their buttermilk counterparts. Add the fizzy lemon-lime drink and create a lighter version of this favorite food. Serve these pancakes with some scrambled eggs, bacon or sausage for a complete meal. If you wish to go a little healthier, substitute the fatty sides with some fresh fruit such as cantaloupe, banana or strawberries.

Things You'll Need

Mix sugar, salt and pancake mix in one bowl until thoroughly combined.

Beat together the egg and two tbsp. oil in a smaller bowl.

Pour the egg mixture into the dry ingredients. Mix slowly until the batter has a smooth appearance.

Pour 2 cups of 7-Up slowly into the pancake mix and stir until completely combined.

Spray the griddle with non-stick cooking spray and turn on medium heat.

When the griddle is hot enough, pour the pancake mix into small circles on the surface of the griddle.

Turn the pancakes one time, until cooked through.
