Opal’s white fluffy frosting can be used on any flavor cake or cupcakes, however it is traditionally served on white cake and topped with coconut. The coconut and the fluffy frosting textures pair well together to make a decadent cake. Opal’s white fluffy frosting is similar to a classic meringue frosting that uses egg whites, but it is quicker and easier to make. This frosting is very light and airy and creates a beautiful and eye-catching finish on any dessert.

Separate the egg whites from the yolks by cracking the shell and pouring the egg into your loose fingers over a small bowl. Discard the shell and gently move the the egg from one hand to the other with loose fingers over the bowl to allow the egg white to slide through your fingers off of the egg yolk. Discard the yolks and pour the whites into the electric mixer bowl.

Turn on the electric mixer to medium speed and beat the egg whites until they are frothy, but have not yet formed peaks. The egg whites will appear slightly yellow in color with bubbles. Do not beat them until they are white and thick.

Add the sugar, syrup, water and salt to the saucepan and place it on the stove over medium heat. Cook it and stir constantly to prevent burning. After the sugar has melted, frequently lift the spoon from the syrup until it the sugar mixture has formed strings in a thin thread of syrup when you pour it back into the pan, then remove it from the heat.

Turn the electric mixer back on medium speed and slowly pour the sugar syrup into the egg whites in a very thin stream. Do not pour the syrup too quickly or it could cook the egg whites as it mixes in. Pour all of the syrup into the egg whites and increase the speed on the mixer to high to make the frosting become very fluffy. It should form peaks when lifted with a spoon.

Fold in the vanilla extract with a rubber spatula. You can also add any additional flavors to the frosting here, but be careful to not over-fold or stir so the frosting stays fluffy.

Frost the dessert of your choice. This fluffy frosting will dress up a round layer cake or cupcakes especially well. Be sure to let the cake or cupcakes cool completely before you frost them.
