You don’t need a mix when you can create homemade Spanish rice. Simply add a few ingredients to the rice as you cook. Make a fat-free Spanish rice with nutritious brown rice. It takes a bit longer to cook, but it is worth the extra time for whole grain goodness. This rice makes an excellent side dish accompanied by Mexican entrees such as tacos, enchiladas or chili.

Add the rice, water, chunky salsa, taco seasoning and chili powder to a sauce pan. Stir the ingredients with a wooden spoon to blend well.

Bring the mixture to a boil over high heat.

Stir to blend the ingredients. Cover the pan with a tightly fitting lid. Reduce the heat to low. Cook on the rice mixture on low heat for 45 to 50 minutes.

Turn the heat off and allow the rice to sit for 5 to 10 minutes.

Stir again to combine well. Serve immediately.


  • Use white rice, following the package directions for proportions of rice to water and cooking time.

  • Make this dish mild or spicy, depending on the type of salsa you use.

  • Taco seasoning mix is available in bulk bins at the grocery store. Substitute sea salt, black pepper and more chili powder if you don’t have taco seasoning.

  • Serve with homemade beans topped with grated cheese for a simple vegetarian dinner.
