Don’t let gravy intimidate you; it really is not that difficult to make. This rich mushroom gravy is versatile and doesn’t contain the unpronounceable ingredients common in many commercial gravies. If you want a meat-based gravy, substitute the vegetable broth for beef, chicken or port broth. Or add a bouillon cube. This recipe is excellent for special occasions.

Things You'll Need

Add vegetable broth, heavy cream, sliced mushrooms and Chablis to a large skillet.

Bring the mixture to a boil over medium heat, stirring often.

Mix the milk and the cornstarch well to remove lumps and then add to gravy. Cook until the gravy is the consistency you desire. Add salt and pepper to taste.

Serve in a gravy bowl and pour over mashed potatoes, pot roast or steak.

  • Flour can be used instead of cornstarch.
