Preheat the oven to 350 degrees. Coat each pan with butter and line the bottom of each with a circle of parchment paper, if available
Combine dry ingredients (sugar, cake flour, baking powder, and salt) in a bowl until well mixed. Sift the mixture to remove all lumps.
Combine wet ingredients (milk, eggs, egg whites, and vanilla) in a separate bowl until well mixed.
With a mixer, blend the softened butter with the dry ingredients, along with the first half of the wet ingredients. Mix until the batter is completely smooth, and then gradually add the remainder of the wet ingredients in several additions, making sure the batter is smooth before adding each new addition.
Divide the batter evenly between the two nine inch pans, or until the pans are 3/4 of the way full.
Bake the cake at 350 degrees for about 30 minutes, or until the center springs back when touched.
After five to ten minutes, turn pan upside down on cooling rack and the cake should easily turn out of the pan. Allow the cake to cool fully before decorating with your favorite frosting!
Check on your cake every few minutes after the first 20 minutes to ensure your cake doesn’t burn if this is your first time using this recipe. Every oven is different!
