Limes and coconuts make a harmonious pair, especially when combined in a cocktail as a sweet martini with a hint of tartness. In a concoction inspired by Canadian Living’s Coconut Lime Pie Martini, coconut water adds refreshing flavor while the tartness from fresh-squeezed lime juice balances the sweetness. The tropical flavors of this dreamy martini will have you singing “You put the lime in the coconut.”

  • 2 ounces vodka
  • 1 ounce coconut rum
  • 2 ounces coconut water
  • Splash of fresh-squeezed lime juice, to taste
  • Lime wheel, for garnish

Add the vodka, coconut rum, coconut water and fresh-squeezed lime juice to a cocktail shaker half filled with ice. Shake spiritedly for 20 to 30 seconds, until it is well chilled. Strain it into a martini glass and garnish with a lime wheel perched on the rim.

Instead of plain vodka, substitute vanilla or whipped cream flavored vodka to sweeten up the drink, or replace the coconut rum with white rum to tone down the sweetness.

Add 1/2 ounce to an ounce of pineapple juice to add even more of a tropical edge to the martini.

Add a pinch of cinnamon as a subtle, complementary spice.
