There is nothing quite like succulent juicy chicken straight from the grill to spice up a BBQ or to add to a fresh summer salad. If you have been hesitant to give it a try because you were afraid that it might not cook completely, its time to fire up the grill and get ready for a delicious treat of grilled chicken.

Things You'll Need

Rinse boneless skinless chicken breast under cold running water. Pat with a paper towel to remove excess moisture, but do not dry completely. You will need some moisture to absorb spices. Separate into halves. You will need ½ chicken breast per person.

Sprinkle with powdered BBQ chicken seasoning. You can find this in the spice aisle of the grocery store. Be sure all areas are covered. Turn and sprinkle on the underside. The chicken breast should be coated completely. You can use any seasoning your prefer, but BBQ seasoning adds a distinctive flavor that enhances grilled chicken.

Preheat the grill for 10 minutes on medium heat. Place the chicken on the grill and close the lid. Allow to cook until the bottom begins to brown. Repeat the process to brown the other side.

Check chicken is cooked in the center by making a cut through the thickest part of the breast. Thoroughly cooked chicken will be white and juicy. If any signs of pink remain, return to the grill and cook until chicken is white in the center.

Grill whole chicken breasts by parboiling the chicken in water prior to grilling. Add the chicken to a pot of hot water and simmer for 10 minutes to partially cook the chicken. Remove from water and coat with BBQ seasoning. Follow the procedure for grilling boneless chicken breasts.

Roast an assortment of fresh vegetables like broccoli, carrots, onions or peppers in aluminum foil. Simply place the veggies on the foil. Add fresh herbs and dab of butter. Fold the foil over the vegetables and create an airtight seam. Serve with grilled BBQ chicken breast for a quick lunch or light dinner.

Serve grilled chicken with potato salad or sliced and used to top a fresh chef salad for a delicious and nutritious meal.
